Leche Asada Con Caramelo – Baked Milk with Caramel

- 83.3 g Sugar (divided for the caramel and the custard)
- 1 EL Water (for the caramel)
- 1.33 Eggs (size M)
- 166.7 ml Whole milk
- 0.33 Lemon (zest)
- 0.17 TL Vanilla extract

Preheat the oven to 180 °C (top and bottom heat).

Heat the water and a portion of the sugar in a small saucepan over medium-low heat.

Cook the mixture until the sugar dissolves into a clear syrup, stirring occasionally.

Continue cooking the syrup over medium heat until it turns dark and golden brown. Stir once or twice to ensure the syrup caramelizes evenly.

Carefully pour the hot caramel into oven-safe ramekins, covering the bottom evenly. Allow to cool until firm.

In a bowl, whisk the eggs with the remaining sugar, whole milk, vanilla extract, and lemon zest until a smooth, homogeneous mixture is formed.

Carefully pour the milk mixture over the set caramel in the ramekins.

Bake the ramekins in the preheated oven for approximately 35-40 minutes until the surface is spotted golden brown ('asada') and the custard is set.

Remove from the oven and allow to cool before serving, ideally in the refrigerator.
Notes
Leche Asada literally means 'baked milk'. Unlike flan, it is often baked directly in the oven without a water bath, which gives it its characteristic dark, roasted crust.
