Classic Meatloaf

Ingredients
- 1.5 lb ground meatloaf mix (equal parts ground beef, pork and veal or turkey)
- 1 cup dried breadcrumbs
- 2 tbsp fresh flat-leaf parsley (chopped)
- 2 eggs (large, lightly beaten)
- 1 onion (medium, grated)
- 1 clove garlic (minced)
- 0.5 cup ketchup (divided)
- 4 tsp Worcestershire sauce (divided; 1 tablespoon plus 1 teaspoon)
- 1.5 tsp Kosher salt
- 0.5 tsp freshly ground black pepper
- 2 tsp light brown sugar

Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper.

In a large mixing bowl, combine the meatloaf mix, breadcrumbs, chopped parsley, beaten eggs, grated onion, and minced garlic.

Add 1/4 cup of the ketchup, 1 tablespoon of the Worcestershire sauce, 1 1/2 teaspoons salt, and 1/2 teaspoon pepper to the bowl.

Using your hands, mix the ingredients together until well combined, being careful not to overwork the meat.

Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf, approximately 9 inches by 5 inches.

Place the baking sheet in the oven and bake the meatloaf for 30 minutes.

While the meatloaf bakes, prepare the glaze by stirring together the light brown sugar, the remaining 1/4 cup ketchup, and the remaining 1 teaspoon Worcestershire sauce in a small bowl.

Remove the meatloaf from the oven and brush the glaze all over the top and sides.

Return the meatloaf to the oven and bake until the glaze starts to caramelize and an instant-read thermometer inserted into the center of the loaf registers 160 degrees F, about 25 minutes more.

Let the meatloaf rest for 10 minutes before slicing and serving to allow the juices to redistribute.
Notes
Grate the onion instead of dicing it to ensure a velvety texture that melts into the meat. For an Italian variation, add 1 tbsp dried oregano, 1 tsp dried basil, and a pinch of dried mint. This meatloaf can be made ahead, cooled, and wrapped for up to 4 days. Reheat at 325°F for 8-10 minutes.
