Ingredients

  • 1 kg Aged beef trim (For deep flavor)
  • 2 kg Beef bones (Large bones for collagen)
  • 2 Carrots (Roughly chopped)
  • 2 Onions (Roughly chopped)
  • 2 Celery stalks (Roughly chopped)
  • 1 bunch Fresh parsley (Tied with an elastic band or kitchen twine for easy removal)
  • 5 L Water (Enough to cover bones and meat in a large pot)

Steps

    Preheat your oven to 400°F (200°C). Place the beef trim, beef bones, chopped carrots, onions, and celery onto a large roasting tray.

    Roast the meat, bones, and vegetables until deeply browned and caramelized.

    Transfer the roasted ingredients into a very large stock pot.

    Deglaze the roasting tray by adding a little water and scraping off all the browned bits (fond) from the bottom. Pour this flavorful liquid into the stock pot.

    Fill the pot with enough water to cover the ingredients. Add the bunch of parsley.

    Bring the pot to a simmer. Skim off any scum or foam that rises to the surface with a spoon.

    Simmer gently for approximately 8 hours. Halfway through the cooking time, remove the parsley bunch.

    Strain the stock through a fine-mesh sieve into a clean container, discarding the solids. Refrigerate the stock overnight until it sets and the fat solidifies on top.

    Carefully scrape off the solidified layer of beef fat (tallow) from the top. Do not discard this; it can be saved for roasting potatoes.

    Transfer the degreased, gelatinous stock back into a clean pot. Bring to a boil and reduce the liquid significantly until it becomes a thick, syrupy concentrate.

    Pour the concentrated liquid into silicone ice cube trays. Alternatively, pour into a flat container and refrigerate until set, then slice into cubes.

    Once fully set and chilled, pop the cubes out of the trays and store them in the freezer for long-term use.

Notes

Removing the fat is essential for stock cubes; otherwise, they will be oily and unpleasant. The resulting cubes are pure collagen and flavor. They can be stored in the freezer for several months.
