Honey Chipotle Beef Burrito Meal Prep

Ingredients
- 1 lb lean ground beef 93/7
- 1 white onion (diced)
- 1 bell pepper (chopped)
- 3 cloves garlic (minced)
- 2 tbsp tomato paste
- 1 tbsp honey (for beef filling)
- 1 tbsp chipotle peppers in adobo (minced, for beef filling)
- 1 tsp smoked paprika
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp garlic powder
- 1 tsp onion powder
- salt & pepper (to taste)
- 0.5 lime juice (freshly squeezed)
- 6 Ole Extreme Wellness wraps (10”)
- 1 cup reduced fat Mexican cheese
- cilantro (chopped, divided)
- 0.75 cup non-fat Greek yogurt
- 1 tbsp light mayo
- 1 tsp honey (for crema)
- 1 tsp chipotle peppers in adobo (for crema)
- water (to thin crema)

Chop the white onion and bell pepper into small, uniform pieces.

Heat a large skillet over medium-high heat. Add the chopped onions and bell peppers and sauté until they are softened and slightly browned.

Add the minced garlic to the skillet and sauté for another minute until fragrant.

Push the vegetables to the side of the skillet and add the lean ground beef to the center.

Season the beef with smoked paprika, cumin, chili powder, garlic powder, onion powder, salt, and pepper.

Brown the beef, breaking it up with a spatula. When it is about 80% cooked through, stir in the tomato paste, 1 tablespoon of minced chipotle peppers, a fresh squeeze of lime juice, and 1 tablespoon of honey.

Continue cooking until the beef is fully cooked and the sauce has thickened and coated the meat. Stir in a portion of the chopped cilantro.

In a small bowl, prepare the Chipotle Crema by whisking together the non-fat Greek yogurt, light mayo, 1 teaspoon of honey, and 1 teaspoon of chipotle peppers in adobo. Add water a teaspoon at a time until the desired drizzling consistency is reached.

Lay out the 6 tortillas. Evenly distribute the beef filling among them, then top each with reduced-fat Mexican cheese and the remaining cilantro.

Fold the sides of each tortilla inward and roll tightly to form a burrito.

Place the burritos seam-side down in a clean skillet over medium-high heat. Toast for 1-2 minutes per side until the tortilla is golden brown and crispy.

Serve the burritos warm with the Chipotle Crema on the side or drizzled on top.
