Ingredients

  • 2 tbsp butter (butter)
  • 0.5 onion (onion, finely chopped)
  • 2 clove garlic (garlic, minced)
  • 2 tbsp flour (all-purpose flour)
  • 3 cup chicken broth (chicken broth)
  • 4 oz cream cheese (cream cheese)
  • pepper (pepper to taste)
  • 2 cup broccoli (chopped into small florets)
  • 1 cup shredded carrot (shredded carrot)
  • 1 cup mozzarella cheese (shredded mozzarella)

Steps

  1. 1

In a large pot over medium heat, melt the butter.

  2. 2

Add the chopped onion and minced garlic to the pot and sauté until fragrant and translucent.

  3. 3

Stir in the flour and cook for about 1 minute to create a roux, ensuring it doesn't burn.

  4. 4

Gradually pour in the 3 cups of chicken broth, whisking constantly to prevent lumps.

  5. 5

Add the cream cheese and black pepper, stirring until the cheese is completely melted and the base is smooth.

  6. 6

Add the chopped broccoli and shredded carrots to the pot.

  7. 7

Stir in the shredded mozzarella cheese.

  8. 8

Reduce the heat to low and cook for approximately 15 minutes, or until the vegetables are tender and the soup has thickened.

Notes

You can use vegetable broth instead of chicken broth for a vegetarian version. Ensure the broccoli is cut into small, bite-sized pieces so it cooks evenly within the 15-minute simmer time.
