Ingredients
Steps
Preheat oven to 400°F (200 °C) (200°C (400 °F)) and line a baking sheet with parchment paper.
In a large bowl, combine the shredded chicken, parmesan cheese, egg, and 2 tablespoons of the buffalo sauce. Mix well until all ingredients are fully incorporated.
Place the chicken mixture onto the prepared baking sheet and press it down firmly to form a circle about 1/4 inch thick.
Bake the chicken crust for 15-20 minutes or until golden brown and firm to the touch.
Remove the crust from the oven. Spread the remaining 2 tablespoons of buffalo sauce over the baked chicken crust.
Sprinkle the mozzarella cheese and red onion evenly over the sauce.
Return the pizza to the oven and bake for another 8-10 minutes, or until the cheese is bubbly and lightly browned.
Remove from the oven and let rest for a couple of minutes. Drizzle with ranch dressing and sprinkle with chopped chives before slicing and serving.
Notes
For the best texture, ensure the chicken is very finely shredded and dry before mixing. You can use rotisserie chicken to save time.
