Easy Minced Meat and Potatoes

Ingredients
- 250 g minced pork (or any meat of choice)
- 1 potato (large, sliced into half-centimeter pieces)
- 2 tbsp light soy sauce
- 1 tbsp dark soy sauce
- 1 tbsp oyster sauce
- 1 tbsp rice wine
- 1 tbsp sesame oil
- 1 tbsp garlic (minced)
- 0.5 tbsp sugar
- 2 tbsp oil (for sautéing)
- 0.5 cup water
- 1 tsp cornstarch (for slurry)
- 2 tbsp water (for slurry)
- green onion (for garnish)

Slice the potato into half-centimeter pieces or according to preference. The thinner they are, the faster they will cook.

To make the sauce, in a small bowl mix light soy sauce, dark soy sauce, oyster sauce, rice wine, sesame oil, minced garlic, and sugar. Set aside.

Add 2 tablespoons of oil to a heated pan and sauté the minced meat until it is lightly browned.

Add the potato slices to the pan and sauté together with the meat.

Pour the prepared sauce mixture into the pan and mix well to coat the meat and potatoes.

Add 1/2 cup of water and cover the pan with a lid.

Simmer for about 8-9 minutes or until the potato slices are fork-tender.

Prepare the cornstarch slurry by mixing 1 teaspoon of cornstarch with 2 tablespoons of water.

Pour the cornstarch slurry into the pan and stir continuously until the sauce has thickened.

Garnish with chopped green onion before serving.
Notes
The author suggests slicing potatoes thinly to reduce cooking time. This dish is inspired by Singaporean hawker center food and is best served with white rice.
