Ingredients

  • 0.5 lb Ground beef (high quality)
  • 0.5 lb Ground pork
  • 3 tbsp Soy sauce
  • 2 tbsp Sugar (or honey)
  • 1 tbsp Minced garlic
  • 1 tbsp Sesame oil
  • 0.25 tsp Black pepper
  • 2 Green onions (finely chopped)
  • 1 tbsp Cooking oil (for frying)

Steps

    In a large mixing bowl, combine the ground beef and ground pork.

    Add the soy sauce, sugar, minced garlic, sesame oil, black pepper, and chopped green onions to the meat mixture.

    Knead and pound the meat mixture thoroughly for several minutes until it becomes sticky and develops a chewy, paste-like texture similar to rice cakes.

    Divide the meat into equal portions and shape them into thick, rectangular or round patties.

    Heat cooking oil in a skillet over medium heat.

    Place the patties in the skillet and cook until browned on the bottom, about 3-4 minutes.

    Flip the patties and continue cooking until fully cooked through and the outside is nicely glazed and caramelized.

    Serve warm with a bowl of steamed rice.

Notes

While traditional Tteokgalbi was made by scraping meat from short ribs, this version uses a convenient mix of ground beef and pork. The key to the texture is the pounding/kneading process which makes the meat 'tteok-like' (chewy).
