Weights are estimates. Together, the ingredients weigh about 1.98 kg before cooking, which is about 495 g per serving.
Steps
Peel the potatoes and boil them until tender. In a separate pot, boil the broccolini.
In a bowl, combine the beef mince, grated zucchini, grated carrot, egg, light soy sauce, and pepper.
Roll the mixture into 24 meatballs, approximately 1 heaped teaspoon of mince per meatball.
In a separate bowl, combine the hoisin sauce, oyster sauce, light soy sauce, sugar, crushed garlic, crushed beef stock cube, corn flour, and water to make the gravy.
Heat a pan over medium heat and add spray oil.
Add the meatballs and brown them on the outside. They do not need to be cooked through at this stage.
Pour in the hoisin gravy and stir to coat the meatballs.
Once the sauce is bubbling, reduce the heat to low and cover the pan with a lid. Simmer for 10 minutes, stirring occasionally so the sauce does not burn.
Mash the boiled potatoes, then mix in the low-fat milk, butter, and salt and pepper to taste.
When the meatballs are done, garnish them with parsley. Serve the meatballs and gravy over a bed of mash with the broccolini on the side.
