Ingredients

  • 2 lb ground beef (divided into 8 equal portions)
  • 2 large onions (cut into 8 thick slices)
  • 12 rebanadas cheddar cheese
  • salt (to taste)
  • black pepper (to taste)
  • pizca sugar (for the onions)
  • oil (for cooking)
  • 0.5 cup mayonnaise
  • 0.33 cup ketchup
  • 0.33 cup sweet relish
  • 2 tbsp yellow mustard
  • 1 tbsp vinegar
  • 0.5 tsp sugar (for the sauce)
  • pizca salt and pepper (for the sauce)

Steps

    Slice the onions into thick rounds, keeping the rings intact.

    Heat a little oil in a cast-iron skillet over medium heat.

    Add the onion slices and season both sides with a small pinch of salt and sugar.

    Cook for about 3 minutes per side, or until soft and caramelized. Carefully transfer them to parchment paper so the rings stay together.

    Divide the 2 lb of ground beef into 8 equal portions. Place each portion between parchment paper and smash them to form thin patties.

    Heat a little more oil in the cast-iron skillet.

    Season one side of each patty with salt and black pepper and place them seasoned-side down in the hot skillet.

    Season the other side, then flip them and cook until browned and fully cooked through.

    Add a slice of cheddar cheese to each patty.

    Place an onion slice in the skillet and top it with cheese as well.

    Cover the skillet with a lid for about a minute, just until all the cheese is melted.

    To assemble, start with a cheesy caramelized onion slice, add one cheesy patty, then the second cheesy patty, and finish with another caramelized onion slice on top. Repeat the process for the rest.

    For the sauce: Mix the mayonnaise, ketchup, relish, mustard, vinegar, sugar, salt, and black pepper until the mixture is smooth.

Notes

Make sure to keep the onion slices intact when cutting and cooking them, as they act as the 'bun' for the burger. Using parchment paper helps flatten the patties evenly and transfer the onions without falling apart.
