Ingredients

  • 700 g Chicken Thigh Fillets
  • 3 Garlic (cloves, for chicken)
  • 2 cm Ginger (cube)
  • 2 Fresh Lemongrass Sticks (finely sliced)
  • 1 tsp Chilli Powder (transcript mentions paprika)

  • 1 Spring Onion (for salad and chicken)
  • 1 Garlic (clove, for salad)
  • 1 tbsp Sesame Seeds
  • 1 tbsp Light Soy Sauce (for salad)
  • 1 tbsp Rice Wine Vinegar
  • 1 tbsp Honey (for salad)
  • 1 tsp Chilli Crisp Oil
  • 1.33 cup Uncooked Rice

Steps

    Prepare the carrot salad by combining the ribboned carrots, 1/2 red onion, fresh coriander, spring onion, 1 clove of garlic, sesame seeds, light soy sauce, rice wine vinegar, honey, and chilli crisp oil in a bowl.

    Mix the salad ingredients well and set aside to let the flavors infuse while you cook the chicken.

    In a large pan or wok over medium-high heat, fry the chicken thigh fillets with the remaining 1/2 red onion, 3 cloves of garlic, ginger, and finely sliced lemongrass.

    Add the brown sugar, chilli powder (or paprika), oyster sauce, soy sauce, fish sauce, and honey to the pan.

    Stir everything together and cook until the chicken is fully cooked through and the sauce has thickened into a glaze.

    Stir through additional spring onion, fresh mild chilli, and a squeeze of lime juice just before serving.

    Cook the rice according to package instructions.

Notes
