Ingredients

  • 12 oz linguine
  • 2 tsp lemon zest
  • 6 tbsp lemon juice (divided)
  • 1.5 lb medium shrimp (peeled and deveined (38 to 40 count))
  • Kosher salt (to taste)
  • pepper (to taste)
  • 3 tbsp olive oil (divided)
  • 3 tbsp unsalted butter (divided)
  • 1 shallot (finely chopped)
  • 0.5 tsp red pepper flakes
  • 4 clove garlic (large, thinly sliced)
  • 1.25 cup dry white wine
  • 2 tbsp flat-leaf parsley (chopped)

Steps

    Cook linguine per package directions.

    Drain the pasta, transfer it to a large bowl, and toss with 2 tablespoons of the lemon juice.

    Meanwhile, pat the shrimp dry and toss in a medium bowl with 1/2 teaspoon salt.

    Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add half of the shrimp and cook for 2 minutes, then flip and cook for 1 minute more. Transfer to a plate (the shrimp will finish cooking later).

    Repeat the searing process with another 1 tablespoon of olive oil and the remaining shrimp.

    Reduce the heat to medium. Add 1 tablespoon of butter and the remaining 1 tablespoon of olive oil to the skillet.

    Add the chopped shallot and red pepper flakes and cook, stirring, for 1 minute.

    Add the sliced garlic and cook, stirring, until golden brown, about 1 to 2 minutes.

    Add the white wine and simmer, scraping up any browned bits from the bottom of the pan, until the liquid is reduced by half, about 3 to 4 minutes.

    Stir in the lemon zest, the remaining 4 tablespoons of lemon juice, the remaining 2 tablespoons of butter, and 1/4 teaspoon each of salt and pepper; simmer until slightly reduced, 1 to 2 minutes.

    Add the shrimp back into the skillet and cook until heated through, about 1 minute.

    Sprinkle with parsley and serve the shrimp over the linguine, drizzled with the pan juices.
