Preheat the oven to 190 °C (375 °F). Lightly grease an approximately 1.5-liter baking dish or a 20 cm square baking dish.

Cook the bacon in a skillet over medium heat until golden and crispy. Transfer it to a paper towel-lined plate, let it cool slightly, and finely chop it.

In a large bowl, mix the softened cream cheese, sour cream, and mayonnaise until smooth and creamy, with no large lumps.

Add the chopped garlic, jalapeños, smoked paprika, pepper, and approximately two-thirds of the bacon. Stir until the ingredients are evenly distributed.

Add 1 cup of cheddar and all of the pepper Jack cheese. Mix until the cheeses are well incorporated. Taste and adjust the salt sparingly.

Transfer the mixture to the prepared baking dish and spread it into an even layer. Sprinkle the reserved cheddar and remaining bacon on top.

Bake for 20 to 25 minutes, until the dip is thoroughly hot, bubbling around the edges, and the cheese on top is melted and lightly browned.
