Steps
Place the quick oats, hemp hearts, chia seeds, vanilla extract, cinnamon, cottage cheese, peanut butter, milk, maple syrup, and a pinch of salt into a high-speed blender.
Blend the mixture on high until completely smooth and creamy.
Divide the blended oat mixture into four jars or airtight containers.
If making the optional chocolate shell, melt the dark chocolate chips and coconut oil together in the microwave in 20-second intervals, stirring until smooth.
Pour the melted chocolate over the top of each oat jar and sprinkle with a pinch of flaky salt.
Seal the containers and refrigerate for at least 8 hours, or overnight, to allow the oats to set.
Before serving, garnish with sliced banana and slivered almonds if desired.
Notes
These oats provide over 30g of protein and 8g of fiber per serving. They are ideal for meal prep and can be stored in the refrigerator for up to 4-5 days.
