Ingredients

  • 0.25 cup light mayonnaise
  • 3 tbsp low-fat cottage cheese (blended until smooth)
  • 1 tsp ketchup
  • 2 tsp yellow mustard
  • 1 tbsp pickle juice
  • 2 tbsp pickles (finely chopped)
  • 1 tbsp white onion (finely chopped and sautéed until soft)
  • 0.5 tsp garlic powder (or 1 small clove of garlic, minced)
  • 0.25 tsp black pepper
  • 0.25 tsp paprika (optional but recommended)

  • 0.5 lb ground beef (formed into two thin patties)
  • 2 slice white onion (thick slices for grilling)
  • 2 slice cheddar cheese
  • 1 low-carb tortilla (large size)
  • 0.5 cup lettuce (shredded)

Steps

    In a small bowl, combine the light mayonnaise, blended cottage cheese, ketchup, yellow mustard, and pickle juice.

    Add the chopped pickles, the tablespoon of sautéed onion, garlic powder, black pepper, paprika, and onion powder. Mix well until combined and set the sauce aside.

    Heat a skillet or griddle over medium-high heat. Place the thick onion slices and cook until they are caramelized and tender on both sides.

    Cook the beef patties in the same skillet until well browned. Place a slice of cheese over each patty and let it melt.

    Once cooked, roughly chop the cheesy meat and grilled onions together directly on the griddle or on a cutting board.

    Place the low-carb tortilla on a flat surface. Spread a layer of the prepared sauce onto the tortilla.

    Add the shredded lettuce and then the chopped meat, cheese, and onion mixture.

    Fold the sides of the tortilla inward and roll tightly to form the wrap. Optionally, sear the wrap in the skillet for 1 minute per side to seal it.

Notes

The author mentions improvising the sauce in the video, but this recipe is the base they were trying to follow. Blended cottage cheese adds creaminess and protein with less fat than traditional mayonnaise.
