A no-cook main-dish slaw combining tender shredded chicken and crisp cabbage with cucumbers, peanuts, scallions, and crunchy nori. A creamy peanut-ginger dressing gives the salad savory, nutty flavor while contrasting textures keep it fresh and satisfying.

Weights are estimates. Together, the ingredients weigh about 1.22 kg before cooking, which is about 305 g per serving.
Steps
In a liquid measuring cup or small bowl, stir together the peanut butter, less-sodium soy sauce, rice vinegar, finely chopped ginger, and finely chopped garlic.
Add warm water 1 tablespoon at a time, stirring after each addition, until the dressing is saucy but still creamy. Use 2 to 4 tablespoons total.
Place the thinly sliced cabbage in a large bowl and season it with a pinch of salt.
Squeeze the salted cabbage gently until it has wilted slightly.
Add the cooked shredded chicken to the cabbage.
Add the thinly sliced cucumbers and prepared peanut dressing to the bowl.
Toss the cabbage, chicken, cucumbers, and dressing together until evenly combined. The slaw may be prepared up to this point up to 1 day ahead.
Top the slaw with the roughly chopped peanuts and sliced scallions.
Crush the nori snacks in your hands and add the pieces to the salad.
Notes
For a vegan option, replace the chicken with a combination of shelled edamame, baked tofu, bean sprouts, and cooked whole grains. The source states that the slaw can be made up to the point before adding the peanuts, scallions, and nori up to 1 day ahead.
