Ingredients

  • 500 g salmon fillet (Cut into medium chunks)
  • 1 red onion (Small; thinly sliced into half-moons)
  • 200 g cherry tomatoes (Halved)
  • 1 tbsp capers
  • salt (To taste)
  • 100 ml olive oil (Use some to coat the baking dish and drizzle the remainder over the ingredients)
  • 100 g pitted olives (Green or black)
  • fresh thyme sprigs (To taste)
  • garlic (Minced; optional, to taste)
  • red pepper flakes (Optional, to taste)
  • lemon juice (Optional; squeeze fresh juice over the dish before serving)

Steps

  1. 1

Preheat the oven to 180°C (350°F).

  2. 2

Drizzle a small amount of the olive oil into a baking dish and spread it over the bottom.

  3. 3

Add the sliced red onion to the baking dish.

  4. 4

Add the halved cherry tomatoes, pitted olives, and capers. Toss the vegetables, olives, and capers with the oil until evenly combined.

  5. 5

Arrange the salmon chunks on top of the vegetable mixture.

  6. 6

Season the salmon with salt to taste.

  7. 7

Scatter the fresh thyme sprigs over the salmon and vegetables.

  8. 8

If using, scatter the minced garlic and red pepper flakes over the dish.

  9. 9

Drizzle the remaining olive oil evenly over the salmon and vegetables.

  10. 10

Bake for about 15 minutes, until the salmon is cooked through and flakes easily in the center. For best results, verify that the thickest pieces reach 63°C (145°F).

  11. 11

If desired, squeeze fresh lemon juice over the baked salmon immediately before serving.
