Ingredients
- 1 cup egg white powder (the video shows egg white powder)
- 1 cup water
- 0.5 cup Greek yogurt (the secret ingredient to maintain moisture)
- cooking spray (for greasing the parchment paper)
Steps
- 1
In the bowl of a stand mixer (or using a hand mixer), combine 1 cup of egg white powder and 1 cup of water.
- 2
Whisk the mixture on high speed until very stiff peaks form. The mixture should be so stiff that it doesn't fall out when you flip the bowl upside down.
- 3
Add half a cup of Greek yogurt to the whipped egg whites.
- 4
Whisk again on medium speed for only about 30 seconds until the yogurt is incorporated but the mixture still holds its firmness.
- 5
Prepare a loaf pan by lining it with parchment paper and spray the paper with a little oil to prevent sticking.
- 6
Pour the mixture into the prepared pan and smooth the top.
- 7
Bake (although the time is not specified in the audio, this type of bread is usually baked at 325°F / 165°C for 30-35 minutes) until golden brown and firm to the touch.
Notes
Greek yogurt is the key ingredient to prevent the bread from being dry. Although the audio mentions 'egg whites', visually and by context of similar recipes by the author, reconstituted egg white powder is used to achieve that cloud-like structure.
