A healthy, crispy, and easy-to-prepare snack, ideal for keto diets. These zucchini slices are breaded with parmesan cheese and baked until golden brown.

Ingredients

  • 1 zucchini (zucchini or squash, sliced)
  • 2 eggs (beaten)
  • garlic salt (to taste)
  • paprika (to taste)
  • 1 cup parmesan cheese (grated)
  • olive oil (for the tray)

Steps

    Preheat the oven to 200°C (400°F).

    Cut the zucchini into medium-thickness slices.

    In a dish or bowl, beat the two eggs.

    In another container, mix the parmesan cheese with the garlic salt and paprika to taste.

    Dip each zucchini slice first into the beaten egg and then into the parmesan cheese mixture, ensuring they are well coated.

    Grease a baking tray with a little olive oil and place the zucchini slices without crowding them.

    Bake for 12 minutes on one side.

    Flip the slices and bake for an additional 13 minutes (completing 25 minutes total) until they are golden and crispy.

    Serve accompanied by tomato sauce if desired.

Notes

If the zucchini releases a lot of water, you can dry the slices with paper towels before dipping them in the egg. You can also try this with eggplant following the same procedure.
