Low-Carb Chicken Pie
Savory leftover chicken pie made with shredded chicken, cream, cheese, and a cooked potato base. Baked until the cheese is melted and golden, creating an easy and comforting dinner.

Ingredients
- 2 cup Cooked shredded chicken (Leftover chicken may be used; approximately 250 g.)
- 1 Cooked, cooled potato (Medium; use it as the pie base.)
- 0.5 cup Chopped onion (Finely chopped; approximately 80 g.)
- 0.5 cup Heavy cream (Whipping cream or unsweetened plant-based cream may be used. Add as much as needed to achieve a creamy mixture.)
- Grated cheese (To taste; use some in the mixture and the rest for topping. Nutritional estimate based on 75 g of semi-hard cheese.)
- Salt (To taste.)
- Black pepper (To taste.)
- Dried oregano (To taste.)

Preheat the oven to 200 °C. Have a small ovenproof dish ready, approximately 18 to 20 cm, and make sure the potato is cooked and completely cooled.

Place the cooked, shredded chicken in a deep bowl.

Add the chopped onion to the bowl and mix to distribute it throughout the chicken.

Gradually add the heavy cream, mixing until the chicken is moist and creamy but not overly liquid.

Season the mixture with salt, black pepper, and oregano to taste. Stir well until the seasonings are fully incorporated.

Add some of the grated cheese to the chicken and mix again to distribute the flavor throughout the filling.

Place the cooked, cooled potato in the bottom of the dish. Mash and spread it with the back of a spoon until it completely covers the base, forming an even layer.

Pour the creamy chicken mixture over the potato base and spread it evenly without pressing it down too firmly.

Cover the entire surface with the remaining grated cheese.

Bake for 10 to 15 minutes, until the cheese is completely melted and golden. If necessary, use the broiler during the last minute, watching closely to prevent burning. Let it rest for a few minutes before serving.
Notes
This recipe is intended as a leftover dinner for using up cooked chicken. Although the post describes it as low-carb, it contains potato in the base; to reduce the carbohydrates further, use a thinner layer of potato or replace it according to preference. The amount of cream, cheese, and seasonings is left to the cook's discretion.
