Ingredients

  • 2 rack baby back pork ribs (About 4 lb total; membrane removed)
  • 0.5 cup soy sauce (For the marinade)
  • 0.25 cup rice vinegar (For the marinade)
  • 2 tbsp sesame oil (For the marinade)
  • 2 tbsp fresh ginger (Finely grated)
  • 4 cloves garlic (Minced)
  • 0.25 cup brown sugar (For the marinade)
  • 2 tbsp gochujang (Korean chili paste; adjust to taste)
  • 0.25 cup honey (For the sticky glaze)
  • 0.25 cup ketchup (For the sticky glaze)
  • 2 tbsp soy sauce (For the sticky glaze)
  • 1 tbsp rice vinegar (For the sticky glaze)
  • 1 tbsp sesame seeds (For finishing)
  • 2 green onions (Thinly sliced, for finishing)

Steps

    Remove the membrane from the bone side of each rack of ribs, if it is still attached. Pat the ribs dry with paper towels and cut each rack into smaller sections if needed so they fit comfortably in a large dish or resealable bag.

    Whisk together the soy sauce, rice vinegar, sesame oil, grated ginger, minced garlic, brown sugar, and gochujang until the sugar is mostly dissolved and the marinade is uniform.

    Add the ribs to the marinade and turn them several times so every surface is coated. Cover and refrigerate for at least 2 hours, or preferably overnight.

    Preheat the oven to 300°F (150°C). Transfer the ribs and marinade to a covered roasting pan or tightly sealed foil packet. Arrange the ribs meaty-side up and seal well to retain steam.

    Bake the covered ribs for about 2 to 2½ hours, until the meat is tender and pulls back from the bones but the racks still hold together. Carefully uncover the pan and discard the excess cooking marinade.

    While the ribs cook, combine the honey, ketchup, soy sauce, and rice vinegar in a small saucepan. Bring the mixture to a gentle simmer over medium-low heat and cook for 3 to 5 minutes, stirring often, until glossy and slightly thickened. Do not let the sugars scorch.

    Heat an outdoor grill to medium-high, about 400°F (200°C), or position an oven rack near the broiler. Brush the cooked ribs generously with the glaze.

    Grill or broil the glazed ribs for 2 to 4 minutes per side, brushing with additional glaze as they cook, until the edges are caramelized and the coating is shiny and sticky. Watch closely because the honey can burn quickly.

    Transfer the ribs to a cutting board and rest for 5 to 10 minutes. Cut between the bones into individual party-style pieces, then sprinkle with sesame seeds and sliced green onions. Serve warm with any remaining glaze.
