Ingredients

  • 4 Lemons (large; halved, juiced (reserve shells and juice))
  • 0.5 cup Strawberries (fresh, blended and strained to make juice)
  • 2 cup Heavy cream (no substitutions recommended)
  • 0.66 cup Granulated sugar

    Slice the lemons in half lengthwise. Run a paring knife around the inside edge of the lemon flesh and scoop out the fruit, being careful not to pierce the skin. Reserve the hollowed-out shells.

    Juice the lemon fruit and strain out any seeds or pulp. Measure out 1/3 cup of lemon juice and set aside.

    Place fresh strawberries in a blender and process until smooth. Pass the puree through a fine-mesh sieve to remove seeds, yielding about 2-3 tablespoons of strawberry juice.

    In a medium saucepan, combine the heavy cream and granulated sugar over medium heat.

    Bring the mixture to a gentle boil, stirring constantly to dissolve the sugar. Let it simmer for 3-5 minutes, watching closely so it does not boil over.

    Remove the pan from the heat and let it cool slightly for a few minutes. Test the consistency by dipping a spoon into the cream; it should coat the back of the spoon thickly.

    Whisk in the reserved lemon juice and the strawberry juice. The acid will react with the cream, causing it to thicken further.

    Place the empty lemon shells in a muffin tin or on a small tray to keep them upright. Pour the strawberry lemon mixture into the shells (or into small jars if preferred).

    Place the possets in the refrigerator and let them set for at least 4 hours, or ideally overnight, until firm.

    Serve chilled, garnished with fresh mint or additional strawberries if desired.

Notes

Do not use substitutions for the heavy cream, as the high fat content is necessary for the chemical reaction with the lemon juice that allows the dessert to set without gelatin. If you don't want to serve them in lemon shells, small glass ramekins or jars work perfectly.
