Ingredients

  • 300 g Cake flour (Chilled)
  • 60 g Sugar
  • 6 g Baking powder
  • 2 g Salt
  • 4 g Earl Grey tea leaves (Finely ground or from tea bags)
  • 80 g Unsalted butter (Cold, cut into small cubes)
  • 100 g Heavy cream (Cold)
  • 1 Egg (Cold, approximately 50g)
  • 60 g Chocolate chips (Semi-sweet or dark)
  • Milk (For brushing on top)

    Sift the cake flour, sugar, baking powder, and salt into a large mixing bowl.

    Add the finely ground Earl Grey tea leaves to the dry ingredients and whisk until evenly distributed.

    Add the cold, cubed unsalted butter to the flour mixture. Use a pastry cutter or two knives to cut the butter into the flour until it resembles coarse crumbs with pea-sized pieces of butter remaining.

    In a separate small bowl, whisk together the cold heavy cream and the cold egg.

    Create a well in the center of the dry ingredients and pour in the cream and egg mixture.

    Mix gently with a spatula until just combined. Do not overmix; the dough should still look slightly shaggy.

    Add the chocolate chips and fold them into the dough briefly.

    Turn the dough out onto a lightly floured surface. Gently press it into a rectangle, fold it in half, and press down again. Repeat this folding process 2-3 times to create layers.

    Shape the dough into a disk about 2-3 cm thick. Wrap it in plastic wrap and refrigerate for at least 1 hour to rest the gluten and chill the butter.

    Preheat your oven to 190°C (375°F).

    Remove the dough from the refrigerator and cut it into 6 equal wedges.

    Place the wedges on a baking sheet lined with parchment paper. Brush the tops lightly with milk.

Notes

Ensure all wet ingredients and the butter are very cold to achieve a flaky texture. For a stronger tea flavor, you can gently crush the tea leaves before adding them.
