Ingredients
Steps
Season the chicken thighs generously with salt and pepper.
Coat the chicken with cornstarch and shake off any excess to ensure a light coating.
In a pan, heat oil over medium-high heat. Add the chicken skin side down and fry each side for 7 minutes or until golden brown and crispy. Set aside.
In a separate pan (or the same pan after wiping), heat the butter over medium heat until melted.
Add the minced garlic to the melted butter and saute for about 1 minute until fragrant.
Add in the soy sauce, mirin, honey, lemon juice, lemon zest, paprika, chili flakes, and black pepper.
Cook the sauce, simmering until it thickens into a sticky glaze.
Add the chicken back to the pan and baste it with the sauce, spooning the glaze over the top to ensure it is evenly coated.
Serve the chicken over hot steamed rice, drizzle with any extra sauce, and garnish with sesame seeds and chives.
Notes
Pro Chef Tip: Always make extra sauce—you’re going to want it. It can be used on veggies or rice. You can freeze both the chicken and the sauce separately in airtight containers for up to 3 months. Thaw in the fridge overnight before reheating.
