Ingredients

  • 1 tbsp Butter
  • 3 Garlic (minced)
  • 1 cup Roasted red peppers (chopped or blended)
  • 12 oz Pasta shells (dry)
  • 3 cup Chicken or vegetable broth
  • Salt (to taste)
  • Black pepper (to taste)
  • 0.75 cup Heavy cream
  • 0.75 cup Parmesan cheese (grated)
  • Fresh parsley (for garnish)

Steps

  1. 1

Melt 1 tablespoon of butter in a large pot over medium heat.

  2. 2

Add the minced garlic to the pot and sauté for about 30 seconds until it becomes fragrant.

  3. 3

Stir in 1 cup of roasted red peppers, 12 oz of dry pasta shells, 3 cups of broth, and salt and black pepper to taste.

  4. 4

Bring the mixture to a simmer and cook for 10–12 minutes, stirring often to prevent the pasta from sticking to the bottom, until the shells are tender and the liquid has significantly reduced.

  5. 5

Lower the heat and stir in 3/4 cup of heavy cream.

  6. 6

Add 3/4 cup of grated parmesan cheese and mix thoroughly until the cheese has melted and the sauce is thick, smooth, and creamy.

  7. 7

Remove from heat and let the pasta rest for 2 minutes to allow the sauce to thicken perfectly.

  8. 8

Garnish with fresh parsley and serve hot.

Notes

Stirring frequently is key in one-pot pasta recipes to ensure the starch from the pasta creates a creamy sauce without burning or sticking to the pot.
