Ingredients

  • 1 lb Boudin links (casing removed)
  • 4 oz Pepper Jack cheese (cut into small cubes)
  • 1 bag Flamin' Hot Cheetos (crushed into fine crumbs for breading)
  • 0.5 cup All-purpose flour
  • 2 Eggs (beaten)
  • Vegetable oil (for deep frying)

Steps

  1. 1

Remove the boudin filling from its casing and place it in a large mixing bowl.

  2. 2

Scoop a portion of boudin and flatten it in your palm. Place a cube of pepper jack cheese in the center, then roll the boudin around the cheese to form a ball about the size of a golf ball. Repeat until all boudin is used.

  3. 3

Prepare your breading station with three separate bowls: one for flour, one for the beaten eggs, and one for the crushed Flamin' Hot Cheetos.

  4. 4

Dredge each boudin ball in the flour, shaking off any excess.

  5. 5

Dip the floured ball into the beaten eggs until fully coated.

  6. 6

Roll the ball in the crushed Hot Cheetos, pressing firmly to ensure an even and thick coating of crumbs.

  7. 7

Heat vegetable oil in a deep fryer or heavy-bottomed pot to 350°F (175°C).

  8. 8

Carefully drop the boudin balls into the hot oil in batches, being careful not to overcrowd the pot.

  9. 9

Fry for 3-4 minutes until the coating is crispy and the cheese inside is melted.

  10. 10

Remove the balls with a slotted spoon and drain on paper towels before serving hot.

Notes

If the boudin is too crumbly to form balls, you can add a small amount of beaten egg to the mixture to help it bind. For the best crust, ensure the Cheetos are crushed very finely.
