Ingredients
- 1 lb beef (cut into bite-sized pieces and browned)
- 3 garlic (cloves, minced for marinade)
- 1 tbsp ginger (freshly grated for marinade)
- 1 tsp turmeric (for marinade)
- 0.25 cup plain yogurt (for marinade)
- 2 onions (thinly sliced)
- 2 tbsp pork fat (or lard, for the roux)
- 3 tbsp all-purpose flour (for the roux)
- 2 tbsp curry powder
- 1 tsp garam masala
- 3 cup beef bouillon (or stock)
- 1 cup tomatoes (crushed or finely diced)
- 1 apple (peeled and grated for sweetness)
Steps
- 1
Cut the beef into bite-sized pieces. In a bowl, combine the beef with garlic, ginger, turmeric, and yogurt. Mix well and set aside to marinate.
- 2
Heat a large pan or pot over a strong flame. Add the sliced onions and sauté, stirring frequently.
- 3
Lower the heat and continue simmering the onions until they are a deep golden brown and caramelized.
- 4
In a separate pan or the same pot (if onions are removed), melt the pork fat.
- 5
Add the flour to the melted fat and whisk constantly to create a roux, ensuring it does not scorch.
- 6
Stir in the curry powder and fresh garam masala to the roux to enhance the flavor and toast the spices briefly.
- 7
Combine the ingredients by adding the beef bouillon, crushed tomatoes, sautéed onions, and the marinated beef mixture into the pot.
- 8
Grate a fresh apple into the curry to add sweetness and balance the spices.
- 9
Simmer the curry until the meat is tender and almost melts in your mouth.
- 10
Serve the curry hot, typically over steamed white rice.
Notes
The key to this recipe is the long caramelization of the onions and the addition of grated apple, which provides the signature sweetness found in Japanese-style curries.
