Ingredients
- 1 lb Brussels sprouts (trimmed and finely shaved)
- 0.25 cup Capers (drained and patted dry)
- 2 tbsp Olive oil (for frying capers)
- 0.5 cup Mayonnaise (base for the dressing)
- 1 tbsp Calabrian chili paste (adjust to taste for spice)
- 1 tbsp Lemon juice (freshly squeezed)
- 1 Garlic (clove, finely grated or minced)
- 0.5 cup Parmesan cheese (finely grated, plus more for topping)
- 0.25 cup Breadcrumbs (toasted, preferably Panko or sourdough crumbs)
- Black pepper (freshly cracked, to taste)

Trim the ends off the Brussels sprouts and use a mandolin (with a safety glove) to shave them into very thin ribbons. Place the shaved sprouts into a large mixing bowl.

Heat olive oil in a small skillet over medium-high heat. Add the drained and dried capers and fry for 3-5 minutes until they burst open and become crispy. Remove with a slotted spoon and drain on paper towels.

In a small bowl, prepare the dressing by whisking together the mayonnaise, Calabrian chili paste, lemon juice, grated garlic, and a generous amount of cracked black pepper.

Pour the dressing over the shaved Brussels sprouts. Add the grated Parmesan cheese and toasted breadcrumbs.

Toss the salad thoroughly until every ribbon of Brussels sprout is well-coated in the dressing.

Transfer to a serving bowl and top with the crispy fried capers and an extra sprinkle of Parmesan cheese before serving.
Notes
Using a mandolin is essential for the light, airy texture of the sprouts. If you don't have one, use a very sharp knife to slice them as thinly as possible. For extra crunch, ensure the capers are very dry before frying to prevent splattering and ensure crispiness.
