Ingredients

  • 250 g Bacon (Cut into small pieces)
  • 1 White onion (Finely chopped; approximately 150 g edible portion)
  • 1.5 tbsp Soy sauce
  • 0.333 cup Water (Approximately 1/3 cup)
  • 0.333 cup Sugar (Approximately 1/3 cup)
  • 1 tbsp Vinegar
  • Salt (A pinch, to taste)
  • 1 tbsp Honey (A drizzle; approximately 1 tbsp)

    Cut the bacon into small pieces and finely chop the white onion.

    Place the bacon in a large skillet over medium heat. Cook, stirring occasionally, until golden brown and most of the fat has rendered, approximately 8 to 10 minutes.

    Add the chopped onion to the skillet and cook it with the bacon until softened and golden, approximately 6 to 8 minutes.

    Add the soy sauce, water, sugar, and vinegar. Stir to combine, scraping up the browned bits from the bottom of the skillet with a spoon.

    Cook the mixture over medium-low heat, stirring frequently, until the liquid has reduced and the mixture has a thick, glossy jam-like consistency, approximately 15 to 20 minutes.

    Stir in the honey and a pinch of salt. Cook for 1 or 2 more minutes, adjusting the sweetness or acidity to taste.

    Remove the skillet from the heat and let the jam cool. It will thicken further as it cools; serve as an accompaniment or store in an airtight container in the refrigerator.
