Ingredients

  • 3 yellow onions (thinly sliced)
  • 0.5 cup sun-dried tomatoes (chopped or blended, packed in oil)
  • 2 tbsp sun-dried tomato oil (from the jar of tomatoes)
  • 1 head garlic (top sliced off to expose cloves)
  • 0.25 cup hemp oil (or olive oil)
  • salt and pepper (to taste)
  • 0.5 lemon juice (freshly squeezed)
  • 0.25 cup fresh basil (chopped)
  • 0.5 cup full-fat coconut milk (canned)
  • 1 lb mini rigatoni (cooked according to package directions)
  • Tin foil

Steps

    Preheat your oven to 375°F (190°C).

    In a large bowl, add the thinly sliced onions and season with salt and pepper.

    Add the chopped or blended sun-dried tomatoes to the dish.
