- 2 eggs (large, room temperature)
- 0.5 cup canola oil
- 3.5 ripe bananas (mashed (about 1.5 cups))
- 2 tbsp sour cream (or plain Greek yogurt)
- 1 tsp vanilla extract
- 1.5 cups all-purpose flour
- 1 tsp baking soda
- 0.25 tsp cinnamon
- 0.5 tsp salt
- 0.5 cup walnuts (toasted and chopped (optional))

Preheat your oven to 325°F (165°C). Grease a 9x5-inch loaf pan thoroughly with butter or non-stick spray.

In a large bowl or the bowl of a stand mixer fitted with a whisk attachment, beat the sugar and eggs together on medium-high speed for about 5 minutes until the mixture is light, fluffy, and pale yellow.

Slowly drizzle in the canola oil while continuing to mix on low speed. This emulsifies the oil into the egg mixture for a better crumb.

Add the mashed bananas, sour cream (or yogurt), and vanilla extract. Mix on low speed until just combined.

In a separate medium bowl, whisk together the all-purpose flour, baking soda, cinnamon, and salt.

Gently fold the dry ingredients into the wet ingredients using a spatula. Be careful not to overmix; stop as soon as no streaks of flour remain.

Notes
For the best flavor, use bananas that are heavily spotted or even completely black. If you don't have sour cream, full-fat Greek yogurt is an excellent substitute that maintains the moisture level.
