Ingredients

  • 100 g baby cucumber (not normal ones; closer to traditional Japanese cucumbers)
  • 1 tbsp sesame oil
  • 2 tsp soy sauce
  • salt (a pinch)
  • 0.5 tsp garlic (grated)
  • 0.5 tbsp toasted sesame seeds

Steps

  1. 1

Place the baby cucumbers on a flat surface and smash them with a rolling pin until they split open.

  2. 2

Tear the smashed cucumbers by hand into bite-sized pieces.

  3. 3

In a mixing bowl, combine the cucumber pieces with 1 tablespoon of sesame oil, 2 teaspoons of soy sauce, a pinch of salt, 1/2 teaspoon of grated garlic, and 1/2 tablespoon of toasted sesame seeds.

  4. 4

Thoroughly mix all ingredients until the cucumbers are well coated in the dressing.

Notes

Key Point: Use baby cucumbers rather than standard large cucumbers as they have a texture and flavor much closer to traditional Japanese cucumbers. Some users suggest adding chili oil or a pinch of sugar for extra depth.
