Fajita Steak and Rice with Queso

Ingredients
- 1 lb steak (cut into small pieces; stir-fry steak recommended)
- all purpose seasoning (to taste)
- onion powder (to taste)
- garlic powder (to taste)
- black pepper (to taste)
- 2 tbsp butter (divided; for cooking steak and veggies)
- 1 sweet onion (diced (such as Vidalia))
- 2 bell peppers (diced; any color (e.g., yellow and orange))
- 1 tbsp minced garlic
- 2 cup instant rice
- 2 cup beef broth
- 1 packet fajita seasoning (Kinder's brand recommended)
- 0.5 tbsp tomato bouillon
- 16 oz queso (container of your favorite queso)

Cut the steak into small pieces if it is not already pre-cut.

Melt a little butter in a medium-high skillet. Add the steak to the pan.

Season the steak directly in the pan with all-purpose seasoning, onion powder, garlic powder, and black pepper. Cook until the steak is done to your liking.

Remove the cooked steak from the skillet and set it aside on a plate.

In the same skillet, add a little more butter or oil if needed. Add the diced sweet onion and diced bell peppers.

Sauté the vegetables for a few minutes. Cook them briefly if you prefer them crunchy, or longer if you prefer them soft and tender.

Add the minced garlic to the skillet during the last minute of cooking the vegetables so it doesn't burn.

Add the 2 cups of instant rice to the skillet with the vegetables. Stir and let the rice toast for 2-3 minutes, keeping a close eye on it to prevent burning.

Pour in the beef broth, fajita seasoning packet, and tomato bouillon. Stir well to combine all ingredients.

Bring the mixture to a boil, then immediately turn off the heat.

Cover the skillet with a lid and let it sit for about 7 minutes until the liquid is fully absorbed and the rice is tender.

Remove the lid and fluff the rice with a fork.

Place the cooked steak back on top of the rice and drizzle generously with queso before serving.
Notes
For the best flavor, the author recommends Kinder's fajita seasoning. You can adjust the vegetable cooking time based on your preference for crunchiness.
