Ingredients

  • 8 oz linguine pasta
  • 0.5 cup creamy peanut butter
  • 2 tbsp less-sodium soy sauce
  • 2 tbsp pure maple syrup
  • 2 tbsp lemon juice
  • 2 tsp sriracha (plus more for serving)
  • 1 tsp ground ginger
  • 1 tbsp vegetable oil
  • 1 medium onion (cut into thin wedges)
  • 1 red bell pepper (cut into bite-size strips)
  • 1 lb frozen large shrimp (31-35/pound) (thawed, peeled, and deveined)
  • 1 cup frozen peas
  • Fresh cilantro (for garnish)
  • toasted sesame seeds (for garnish)

Steps

  1. 1

Bring a large pot of lightly salted water to a boil.

  2. 2

Cook pasta until tender with a bite, 9 to 11 minutes, or according to package directions.

  3. 3

Reserve 1/2 cup cooking water; drain the pasta.

  4. 4

To make the peanut sauce: Whisk together peanut butter, soy sauce, maple syrup, lemon juice, 2 teaspoons Sriracha, ginger, and 2 tablespoons of the reserved cooking water.

  5. 5

Heat oil over medium-high heat in a very large skillet.

  6. 6

Add onion and bell pepper. Cook and stir until softened, about 4 minutes.

  7. 7

Add shrimp and peas. Cook and stir until shrimp is opaque, 3 to 4 minutes.

  8. 8

Add pasta and peanut sauce to the skillet. Toss to combine.

  9. 9

Cook until heated through, 1 to 2 minutes, adding additional pasta water as needed to reach desired sauce consistency.

  10. 10

Garnish with cilantro and/or sesame seeds. Serve with additional Sriracha.

Notes

If you don't have rice noodles, linguine is an excellent substitute for this dish. Ensure the shrimp is fully thawed and deveined before starting for the best texture.
