Ingredients

  • 1.5 lb chicken thighs (boneless, skinless)
  • 12 oz smoked sausage (sliced into rounds (e.g., Andouille))
  • 1 onion (diced)
  • 1 bell pepper (diced)
  • 2 stalks celery (diced)
  • 3 cloves garlic (minced)
  • 1 tbsp Cajun seasoning (or to taste)
  • 0.5 cup chicken broth
  • 14.5 oz diced tomatoes (one can, undrained)

Steps

    Prepare the ingredients by dicing the onion, bell pepper, and celery. Slice the smoked sausage into rounds and mince the garlic.

    Add the chicken thighs, sliced smoked sausage, diced onion, bell pepper, celery, and minced garlic to the slow cooker.

    Sprinkle the Cajun seasoning over the ingredients.
