- 1.5 lb chicken thighs (boneless, skinless)
- 12 oz smoked sausage (sliced into rounds (e.g., Andouille))
- 1 onion (diced)
- 1 bell pepper (diced)
- 2 stalks celery (diced)
- 3 cloves garlic (minced)
- 1 tbsp Cajun seasoning (or to taste)
- 0.5 cup chicken broth
- 14.5 oz diced tomatoes (one can, undrained)
