Ingredients

  • 250 ml Milk (200 ml for heating, 50 ml for mixing with the custard powder)
  • 0.5 Pck. Vanilla custard powder (about 20 g, depending on the package size)
  • 25 g Sugar
  • 1 Rolle Fresh puff pastry (from the refrigerated section)
  • 1 Egg yolk (from a size M egg; the egg white is not used)
  • 1 EL Milk (for whisking with the egg yolk)
  • Flour (for the work surface)
  • Water (for brushing the pastry edges)
  • Powdered sugar (for dusting)

Steps

    Prepare the custard filling first. Heat 200 ml of the milk in a small saucepan without allowing it to boil vigorously.

    In a small bowl, mix the vanilla custard powder with the sugar and the remaining 50 ml of milk until smooth and lump-free.

    Pour the custard mixture into the hot milk. Bring everything briefly to a boil, stirring constantly, until the custard thickens noticeably.

    Remove the saucepan from the heat and let the custard cool.

    Roll out the puff pastry on a lightly floured work surface and cut it into 6 to 8 equal-sized rectangles.

    Preheat the oven to 200 °C conventional heat or 180 °C fan-assisted.

    Place 1 to 2 tsp of vanilla custard on one half of each pastry rectangle. Leave a border around the filling.

    Brush the uncovered pastry edges with a little water. Fold each rectangle diagonally over the filling to form a triangle.

    Press the pastry edges firmly together all the way around with a fork so the pockets remain sealed during baking.

    Separate the egg. Whisk the egg yolk with 1 tbsp of milk and brush a thin layer over the tops of the pastry pockets.

    Bake the puff pastry custard pockets for 15 to 20 minutes, until puffed and golden brown.

    Let the pockets cool briefly, then dust them with powdered sugar. They are especially delicious while still lukewarm.

Notes

The baking time specified in the recipe is 15–20 minutes. The custard pockets taste best fresh and lukewarm; they can also be packed as a small snack to take on the go.
