Ingredients

  • 1 Silken tofu (About one package; drain off excess water)
  • 100 g Tapioca starch
  • Cooking oil (For pan-frying, about 1 tbsp; adjust according to the condition of your nonstick pan)
  • Soy sauce (Add after frying for seasoning; adjust to taste, estimated at about 1 tbsp)
  • Mirin (Add after frying for seasoning; adjust to taste, estimated at about 1 tbsp)
  • Nori (Serve alongside; tear into pieces or cut into bite-sized portions; quantity unspecified)

Steps

    Drain the excess water from the silken tofu and place it in a bowl. Add 100 g tapioca starch and mix thoroughly with a spatula or chopsticks until a smooth, thick tofu batter forms with no obvious dry starch remaining.

    Divide the tofu batter into your desired portions. You can shape it into small patties or strips; smaller portions are easier to cook through and more convenient to eat with nori.

    Heat a frying pan over medium-low heat. Add a small amount of cooking oil and spread it evenly over the surface of the pan.

    Add the tofu batter to the pan according to the desired size, leaving space between each piece. Gently shape them with a spatula and fry until the side touching the pan has set and turned golden brown.

    Carefully flip the pieces and continue frying until both sides are cooked through and lightly browned, with a slightly crisp exterior and a chewy center.

    Add the soy sauce and mirin to the pan. Gently turn the tofu pieces so the seasoning sauce coats the surface evenly.

    Simmer briefly over medium-low heat until the sauce has reduced slightly and the tofu pieces have taken on an attractive glazed color. Do not let the sauce burn completely.

    Remove from the pan and serve with nori. You can wrap the tofu nori yaki in nori or place it on top of nori and eat them together.

Notes

The original video did not provide precise quantities for the soy sauce, mirin, frying oil, or nori. The amounts above are estimated for home preparation and can be adjusted to taste. Tapioca starch gives the finished dish its chewy texture.
