Chicken & Chorizo Risotto

Ingredients
- 100 g chorizo (diced)
- 1 chicken breast (large, diced or pre-cooked and shredded)
- 200 g arborio rice
- 750 ml chicken stock (kept warm)
- 1 onion (finely diced)
- 2 cloves garlic (minced)
- 100 ml white wine (dry)
- 25 g butter (unsalted)
- 30 g Parmesan cheese (grated, plus extra for serving)
- extra virgin olive oil (for drizzling)
- salt and black pepper (to taste)

In a large pan or skillet over medium heat, add the diced chorizo. Fry until the oils are released and the chorizo becomes crispy. Remove the crispy chorizo from the pan, leaving the flavorful oil behind.

Add the diced chicken to the same pan and cook in the chorizo oil until golden and cooked through. Remove the chicken and set aside with the chorizo.

Add the finely diced onion to the pan (add a splash of olive oil if needed) and sauté until translucent and soft, about 5 minutes.

Stir in the minced garlic and cook for 1 minute until fragrant.

Add the arborio rice to the pan and toast for 2 minutes, stirring constantly, until the edges of the grains are translucent.

Pour in the white wine to deglaze the pan, scraping up any browned bits from the bottom. Simmer until the liquid has almost completely evaporated.

Begin adding the warm chicken stock one ladle at a time. Stir frequently and wait until each ladle of liquid is absorbed before adding the next. Continue this process until the rice is tender but still has a slight bite (al dente), which should take about 18-20 minutes.

Once the rice is cooked, stir the cooked chicken and most of the crispy chorizo back into the risotto.

Remove the pan from the heat. Stir in the butter and grated Parmesan cheese vigorously to create a creamy emulsion. Season with salt and pepper to taste.

Serve the risotto topped with the remaining crispy chorizo, a generous grating of Parmesan cheese, and a drizzle of extra virgin olive oil.
