Steps
Prepare the vegetables: slice the tomatoes and yellow bell pepper. Chop the green onions, parsley, and dill (20 g).
In a bowl, beat 4 eggs with the salt (4 g), black pepper (4 g), and cream (30 g). Add the chopped herbs (green onions, parsley, and dill) and mix.
Heat a skillet with the vegetable oil (20 ml). Add the tomato slices and sauté briefly.
Pour the egg mixture over the tomatoes. Arrange the sliced yellow pepper, mozzarella (150 g), grated cheese (100 g), and cheddar cheese (150 g) on top.
Cook covered over low heat until the eggs are set and the cheese has melted.
For the sauce: grate the cucumbers and chop the garlic, mint, and remaining dill (10 g).
Mix the yogurt (200 g) with the prepared cucumbers, garlic, herbs, lemon juice, olive oil (10 ml), and salt (2 g).
Serve the omelet hot with the prepared cold sauce.
Notes
This recipe makes a hearty breakfast or a light dinner. The sauce is reminiscent of classic tzatziki and complements the rich flavor of the cheesy omelet perfectly.
