Weights are estimates. Together, the ingredients weigh about 610 g before cooking, which is about 155 g per serving.
Steps
Bring a large saucepan of water to a boil.
Meanwhile, place the thinly sliced scallions, olive oil, lemon juice, grated ginger, and white miso in a large bowl.
Season the dressing mixture with salt and pepper. Whisk until well combined, mashing the miso as needed until it dissolves.
Lightly salt the boiling water.
Add the broccoli to the boiling water and cook until it is bright green and slightly softened, about 2 minutes.
Drain the broccoli well, shaking the colander to remove excess water. Transfer it to a paper towel-lined plate and let it drain for 5 minutes, tossing it occasionally to eliminate additional excess water.
Add the broccoli to the bowl with the dressing. Season with additional salt and pepper, then toss until the broccoli is evenly coated.
Transfer the salad to a large serving bowl and serve warm, at room temperature, or cold.
Notes
Thoroughly draining the broccoli is important; excess water can thin and dilute the dressing. Serve alongside roasted chicken, salmon, or pan-fried tofu. Leftovers can be chopped and tossed with beans, pasta, olive oil, and grated Parmesan for a quick lunch.
