Ingredients
- 2 Salmon fillets (skin-on or skinless, patted dry)
- 1 tbsp Olive oil (for searing)
- 2 tbsp Butter (unsalted, divided)
- 3 cloves Garlic (minced)
- 0.5 cup Heavy cream
- 1 tbsp Lemon juice (freshly squeezed)
- Salt (to taste)
- Black pepper (to taste)
- 1 tbsp Fresh parsley (chopped, for garnish)
Steps
- 1
Pat the salmon fillets dry with paper towels and season both sides generously with salt and black pepper.
- 2
Heat olive oil in a large skillet over medium-high heat until shimmering.
- 3
Place the salmon fillets in the skillet (skin-side down first if using skin-on). Sear for 4-5 minutes until the bottom is golden and crispy.
- 4
Flip the fillets and cook for another 3-4 minutes until the salmon is cooked through to your desired doneness. Remove salmon from the pan and set aside on a plate.
- 5
Reduce the heat to medium and add 1 tablespoon of butter to the same skillet. Once melted, add the minced garlic and sauté for about 1 minute until fragrant but not browned.
- 6
Pour in the heavy cream and bring to a gentle simmer. Let it cook for 2-3 minutes until slightly thickened.
- 7
Stir in the remaining tablespoon of butter and the lemon juice until the sauce is smooth and glossy. Season with additional salt and pepper if needed.
- 8
Return the salmon fillets to the skillet, spooning the sauce over the fish. Garnish with fresh parsley and serve immediately.
Notes
For a thicker sauce, you can add a tablespoon of grated Parmesan cheese while simmering the cream. Serve alongside roasted asparagus or over a bed of pasta.
