Ingredients
- 1.5 kg white potatoes (Peeled; use 1 to 1.5 kg total, cut into 2–3 cm pieces)
- 500 g water (For steaming in the Thermomix bowl)
- 100 g milk (Use 100–120 g)
- 30 g butter
- salt (To taste)
- black pepper (To taste)
Steps
- 1
Peel the potatoes and cut them into pieces 2–3 cm in size. Place the potato pieces in the Thermomix Varoma dish and tray.
- 2
Add 500 g water to the Thermomix bowl. Position the Varoma on top of the bowl and place the Varoma lid on top.
- 3
Steam for 30 minutes at Varoma temperature, speed 1.
- 4
Check that the potatoes are crumbly before proceeding. If they are not yet crumbly, stir the potatoes and steam for a further 5 minutes at Varoma temperature, speed 1, or until crumbly.
- 5
Empty the water from the Thermomix bowl.
- 6
Fit the whisk attachment. Add the butter, steamed potatoes, milk, and salt to the bowl.
- 7
Place the lid on the bowl and allow the butter to melt fully.
- 8
Mix for 20 seconds at speed 3.
- 9
Check the texture and repeat the mixing if the potatoes are still lumpy.
- 10
Check the seasoning. Mix for a further 10 seconds at speed 3, or until the desired consistency is reached. Adjust the seasoning with pepper and additional salt if needed.
Notes
The recipe specifies 1 to 1.5 kg potatoes and 100–120 g milk; the structured quantities use the lower end of each range. The source does not specify the exact repeat time when the potatoes remain lumpy, so check frequently rather than mixing longer than needed.
