A viral, low-effort method for making dumplings where meatball fillings are browned in a pan and then steamed under a 'blanket' of wonton wrappers, eliminating the need for tedious folding.

Ingredients

  • 1 lb ground meat (turkey, beef, pork, or chicken)
  • 2 tbsp green onion (chopped)
  • 4 garlic (cloves, freshly minced)
  • 1 tsp sesame oil
  • 1 tbsp soy sauce (plus more for finishing)
  • mirin (a dash)
  • white pepper (a dash (referred to as albino pepper))
  • 2 tbsp olive oil (for frying)
  • 1 package dumpling or wonton wrappers (enough to cover each meatball)
  • water (enough to create a thin layer in the pan for steaming)
  • chili crisp (for topping)
  • sesame seeds (for garnish)

Steps

    In a large mixing bowl, combine 1 pound of ground meat (turkey, beef, pork, or chicken), 2 tablespoons of chopped green onions, 4 cloves of minced garlic, 1 teaspoon of sesame oil, 1 tablespoon of soy sauce, a dash of mirin, and a dash of white pepper.

    Mix the ingredients thoroughly by hand until well combined.

    Form the meat mixture into average-sized meatballs. If you have extra meat, it can be refrigerated for later use.

    Heat a pan over medium heat and drizzle in 2 tablespoons of olive oil.

    Add the meatballs to the pan and cook for 2 to 3 minutes, rolling them around to brown the exterior. Do not cook them all the way through at this stage.

    Reduce the heat to medium-low. Take the dumpling or wonton wrappers and place one over each meatball like a blanket, pressing it down slightly to cover.

    Pour a small amount of water into the bottom of the pan to create a thin layer for steaming.

    Cover the pan with a lid and let the dumplings steam for 6 to 7 minutes.

    Remove the lid and finish the dish by topping with chili crisp (or chili oil), sesame seeds, and a few extra dashes of soy sauce.

Notes

This technique is a great time-saver as it avoids the manual folding of individual dumplings. Ensure the pan has a tight-fitting lid to properly steam the wrappers and finish cooking the meat.
