Ingredients

  • 0.5 lb pasta (short pasta recommended)
  • 2 tbsp vegan butter (divided)
  • 3 tbsp fresh parsley (finely chopped)
  • 1 cup onion (finely chopped)
  • 2 tbsp olive oil
  • 1 tsp kosher salt (plus 2 tbsp for pasta water)
  • 0.5 tsp black pepper
  • 1 tbsp tomato paste
  • 1 tsp garlic powder
  • 2 tbsp sweet paprika (Hungarian sweet paprika preferred)
  • 2 oz chickpeas (15 oz. cans, drained and rinsed)
  • 1 tbsp all-purpose flour
  • 1 cup vegetable broth
  • 2 cup crushed tomatoes
  • 0.5 cup vegan sour cream
  • 0.125 tsp red chili flakes (optional; up to 1/4 tsp)

Steps

    Cook pasta according to package directions for al dente in salted water (using 2 tbsp kosher salt).

    Drain the pasta and transfer it to a large mixing bowl. Add 1 tbsp of vegan butter and the fresh parsley, tossing to coat.

    Meanwhile, in a pan over medium heat, add the chopped onions, olive oil, the remaining 1 tbsp of vegan butter, 1 tsp salt, and black pepper.

    Stir the onion mixture and cook on medium-low heat for 5 minutes until softened.

    Add the tomato paste and garlic powder to the pan. Stir and cook for 3 minutes.

    Stir in the sweet paprika and the drained chickpeas.

    Stir in the all-purpose flour until well combined.

    Stir in the vegetable broth, followed by the crushed tomatoes, vegan sour cream, and optional red chili flakes.

    Stir well to incorporate all ingredients. Bring the mixture to a gentle simmer and cook for 4-5 minutes, being careful not to let it boil.

Notes

Use a short pasta shape (like rotini or penne) to better hold the chickpeas and creamy sauce. Hungarian sweet paprika is highly recommended for the most authentic flavor; if using smoked paprika, reduce the amount to 1-2 tsp as it is much stronger. Leftovers often taste even better the next day. You can also stir in fresh baby spinach at the end for extra greens.
