Weights are estimates. Together, the ingredients weigh about 1.22 kg before cooking, which is about 305 g per serving.

Steps

Cook Noodles

  1. Bring a pot of water to a boil. Cook the udon noodles according to the package instructions until tender, then drain them and set them aside.

Prep & Sear Chicken

  1. Place the bite-sized chicken cubes in a bowl. Toss them with the cornstarch, salt, and black pepper until the pieces are evenly coated.

  2. Heat the olive oil or avocado oil in a large skillet or wok over medium-high heat.

  3. Add the coated chicken to the hot skillet or wok. Cook for 5–6 minutes, turning and stirring as needed, until golden and cooked through. Remove the chicken from the pan and set it aside.

Sauté Veggies

  1. Add the julienned zucchini to the same skillet or wok. Stir-fry for 2–3 minutes, until it begins to soften while retaining some bite.

  2. Add the sliced red bell pepper to the skillet. Continue stir-frying the vegetables for 2–3 minutes, until tender-crisp.

Make Glaze & Toss

  1. In a small bowl, whisk together the soy sauce or tamari, honey, toasted sesame oil, rice vinegar, minced garlic, and grated ginger until combined.

  2. Return the cooked chicken to the skillet and add the drained udon noodles.

  3. Pour the honey sesame glaze over the chicken, noodles, and vegetables. Toss everything together for about 2 minutes, until the noodles and chicken are evenly coated and the sauce looks glossy.

Garnish & Serve

  1. Plate the stir-fry while hot. Sprinkle it with the toasted sesame seeds, chopped green onions, and fresh cilantro, then serve immediately.

Notes

The source lists chicken breast or thighs and olive oil or avocado oil as alternatives, and udon may be fresh or pre-cooked. Adjust added salt carefully because soy sauce or tamari is salty.
