One-Pot Marry Me Chicken Gnocchi

Ingredients
- 2 tbsp extra virgin olive oil
- 500 g chicken breast (diced)
- 1 brown onion (finely chopped)
- 4 garlic cloves (minced)
- 0.75 cup sun-dried tomatoes (sliced)
- 1 tbsp tomato paste
- 2 tsp Italian seasoning
- 2 tsp paprika
- 0.5 tsp chilli flakes (optional)
- sea salt (to taste)
- cracked black pepper (to taste)
- 1.5 cup chicken stock
- 0.75 cup cooking cream
- 500 g potato gnocchi
- 3 cup baby spinach
- 0.75 cup parmesan cheese (grated, plus extra to serve)

Heat 2 tablespoons of extra virgin olive oil in a large oven-safe or deep frying pan over medium-high heat.

Add the diced chicken to the pan, season with sea salt and cracked black pepper, and cook until golden and almost cooked through.

Remove the chicken from the pan and set aside.

In the same pan, add the chopped onion and cook for 3–4 minutes until softened.

Stir in the minced garlic, 2 teaspoons Italian seasoning, 2 teaspoons paprika, and 1/2 teaspoon chilli flakes (if using). Cook for a further minute until fragrant.

Add 3/4 cup sliced sun-dried tomatoes and 1 tablespoon tomato paste, stirring well to combine. Cook for 1–2 minutes to deepen the flavor.

Return the cooked chicken to the pan.

Pour in 1 1/2 cups chicken stock and 3/4 cup cooking cream. Stir to combine and bring the mixture to a gentle simmer.

Add 500 grams potato gnocchi and stir through the sauce.

Simmer for 5–7 minutes, stirring occasionally, until the gnocchi is tender and the sauce has thickened. If the sauce becomes too thick, add a splash of water to loosen it.

Stir through 3 cups baby spinach until wilted.

Mix through 3/4 cup grated parmesan cheese until melted and the sauce is creamy.

Finish the dish with extra parmesan, cracked black pepper, and additional chilli flakes if desired.
Notes
If the sauce thickens too much while simmering the gnocchi, add a splash of water or extra stock to reach your desired consistency.
