Ingredients
- 1.25 cup cottage cheese (blended; reserve 2 tbsp for icing)
- 1 tsp vanilla extract
- 2 tbsp maple syrup
- 1.75 cup all-purpose flour
- 2.5 tsp baking powder
- 1 tbsp coconut oil (to spread on dough)
- 0.25 cup brown sugar
- 3 tbsp cinnamon
- 3 tbsp powdered sugar (for icing)

Preheat your oven to 350°F (175°C).

In a blender, combine the cottage cheese, vanilla, and maple syrup. Blend until completely smooth.

Measure out and set aside 2 tablespoons of this blended wet mixture to use later for the icing.

In a large mixing bowl, whisk together the flour and baking powder.

Add the remaining wet mixture to the dry ingredients and mix until a dough forms.

Knead the dough into a ball and roll it out into a rectangle on a lightly floured surface.

Spread the coconut oil evenly over the surface of the dough.

In a small bowl, mix the brown sugar and cinnamon together, then sprinkle this mixture evenly over the coconut oil.

Roll the dough tightly starting from the widest side to form a log.

Cut the log into 1-inch thick rounds and place them in a baking dish.

Bake for 15 minutes at 350°F until cooked through.

While the rolls bake, whisk together the 2 tablespoons of reserved wet mixture and the powdered sugar to create the icing.

Remove the rolls from the oven and glaze immediately with the icing while warm.
Notes
Be sure to blend the cottage cheese until it is completely smooth to ensure the dough has a consistent texture. If the dough is too sticky to roll, add a tiny bit more flour to your hands and surface.
