Ingredients

  • 1 lata Condensed milk (One standard can; the recipe does not specify the exact size.)
  • 2 Eggs
  • 90 g Butter
  • 1 tbsp Vanilla extract
  • 3.5 cup All-purpose flour (Sifted; reserve a little extra for flouring the work surface.)
  • 1 tbsp Baking powder
  • Salt (A pinch.)
  • All-purpose flour for the work surface (As needed to prevent the dough from sticking while working with and portioning it.)

Steps

  1. 1

Place the condensed milk, eggs, butter, and vanilla extract in a bowl. Whisk with a balloon whisk until well combined and smooth.

  2. 2

Pass the all-purpose flour, baking powder, and pinch of salt through a sieve. Sift the dry ingredients over the liquid mixture.

  3. 3

With very clean hands, mix everything until a sticky, homogeneous dough forms. There is no need to knead excessively; simply combine the ingredients.

  4. 4

Let the dough rest for 5 minutes, until it relaxes slightly while retaining its sticky texture.

  5. 5

Flour a work surface and transfer the dough onto it. Divide the dough into portions of approximately 60 g each.

  6. 6

Shape each portion into a ball and flatten it or shape it into a gordita. Repeat until all the dough has been used.

  7. 7

Heat a clean skillet over medium heat until very hot. The recipe does not indicate adding oil, so cook the gorditas directly in the skillet.

  8. 8

Place the gorditas in the hot skillet, leaving space between them. Cover the skillet and cook them for approximately 4 minutes, until the bottoms are cooked and lightly browned.

  9. 9

Turn each gordita over with a spatula. Cover the skillet again and cook for approximately 4 more minutes, until they are cooked through, soft, and fluffy.

  10. 10

Remove the gorditas from the skillet and continue cooking the remaining ones in batches, repeating the same cooking time. Serve warm or let them cool before storing.

Notes

The recipe specifies 60 g portions; the approximate yield is 17 gorditas, although this may vary depending on the size of the condensed milk can and any dough loss. Cook over medium heat and keep the skillet covered so they cook through without browning too much on the outside.
