Ingredients
- 8 oz rotini pasta (cooked al dente and drained)
- 2 tbsp olive oil (divided)
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 0.25 cup parmesan cheese (grated)
- 1 cucumber (diced)
- 1 cup cherry tomatoes (halved)
- 0.5 red onion (finely diced)
- 1 bell pepper (diced)
- 0.5 cup feta cheese (crumbled)
- 2 tbsp red wine vinegar
- salt and black pepper (to taste)

Preheat your air fryer to 400°F (200°C).

In a large bowl, combine the cooked rotini pasta with 1 tablespoon of olive oil, garlic powder, Italian seasoning, and grated parmesan cheese. Toss until the pasta is evenly coated.

Place the seasoned pasta in the air fryer basket in a single layer. Air fry for 10-15 minutes, shaking the basket halfway through, until the pasta is golden brown and crispy.

While the pasta is air frying, dice the cucumber, bell pepper, and red onion. Halve the cherry tomatoes.

In a large salad bowl, combine the diced cucumber, tomatoes, red onion, and bell pepper.

Add the crumbled feta cheese to the mixture.

Drizzle with the remaining 1 tablespoon of olive oil and the red wine vinegar. Season with salt and black pepper to taste.
