Ingredients

  • 1 red apple
  • 2 eggs (size M)
  • 0.5 tsp ground cinnamon
  • 40 g wheat flour, type 405
  • 1 tbsp water
  • 30 g almonds (chopped or slivered)
  • 200 g quark (low-fat quark or quark-yogurt cream)
  • 20 g coconut blossom sugar
  • 0.5 pinch salt
  • 20 g butter

Steps

    Preheat the oven to 180 °C (fan oven).

    Wash the apple. Slice one half of the apple into thin slices and dice the other half into small cubes.

    Separate the eggs. Beat the egg whites with a pinch of salt until stiff peaks form.

    In a separate bowl, mix the egg yolks, quark, water, coconut blossom sugar, cinnamon, and flour into a smooth batter.

    Gently fold the beaten egg whites into the quark batter to keep the mixture fluffy. Also fold in the diced apples.

    Melt the butter in an oven-proof pan over medium heat. Pour the batter into the pan and distribute the apple slices and almonds evenly on top.

    Briefly cook the pancake on the stove until the bottom is slightly set.

    Place the pan in the preheated oven and bake the Kaiserschmarrn for approx. 10-15 minutes until golden brown and risen.

    Tear the pancake into bite-sized pieces using two forks and sprinkle with additional cinnamon or powdered sugar as desired.

Notes

For a particularly festive touch, a flavored quark-yogurt cream (e.g., roasted almond) can be used.
